There are basically two kinds of cake--room temperature cakes and chilled cakes. Wedding cakes and fondant cakes typically are cakes that are best eaten at room temperature and do not require refrigeration. Room temperature cakes are less delicate which makes them easier to transport and can sit on display for several hours. Chilled cakes are cakes with whipped cream and mousses and require refrigeration. Sheet cakes and single tier cakes can be either chilled or room temperature cakes.
