Lately I have been asked to do a lot of sheet cakes, which I really enjoy--and they are much easier to transport than wedding cakes!

My sweet four year-old niece requested a "round cake, lemon, with Minnie-mouse's face, polka dots, and flowers." To make Minnie's face I rolled out a a piece of gumpaste thin enough that I could see through it to trace a printed picture. Then I painted the colors and details with food color gels. The bow, polka dots, and flowers are made out of gumpaste. The cake itself is frosted in fluffy lemon buttercream.

chilled cakes

There are basically two kinds of cake--room temperature cakes and chilled cakes. Wedding cakes and fondant cakes typically are cakes that are best eaten at room temperature and do not require refrigeration. Room temperature cakes are less delicate which makes them easier to transport and can sit on display for several hours. Chilled cakes are cakes with whipped cream and mousses and require refrigeration. Sheet cakes and single tier cakes can be either chilled or room temperature cakes. Here are some of my favorite chilled cakes.

sheer buttercream with fresh flowers

It's all about the flowers. Before the flowers are added, "naked" cakes are--well--pretty naked.
With flowers, though, this is one of my favorite styles.
